Chef Eric Carter from the J Bar is back! He shares his recipe for a caramelized spring onion dumpling with sherry reduction and an herb soubise.
Ingredients
- 4 cups flour
- 1 cup sour cream
- 2 eggs
- 2T chives
- 2 oz. truffle oil
- 2 oz. parmesan
Filling
- 2 caramelized onions
- thyme
- 1 cup panko
Method of Preparation
Place flour in mixing bowl. Stir together remaining ingredients. Slowly add wet to dry ingredients in a mixer. Mix with dough hook until a ball forms. Wrap and rest 30 min. Roll out dough with sheeter to 1/4 " thickness. Cut into rounds with 70 mm. Place purple scoop of filling inside each. Press and seal with pierogi press.
