RECIPE: Gazpacho

If you’re looking for a fresh, light and delicious summer treat, gazpacho is perfect for sweltering summer days. Chef Andrew Sloan from Delish! Catering shares his recipe.

Gazpacho

Ingredients:

  • 5 local tomatoes
  • 2 cucumbers
  • 1 large yellow onion
  • 1 sprig fresh oregano
  • 1 Tbl. chopped fresh basil
  • ¼ C. sherry vinegar
  • 1 C. soda water
  • salt and pepper

 

Method:
Core and quarter all of the tomatoes. Peel, seed and cut cucumbers into 1 inch pieces, dice the onions. Combine all ingredients except the soda water and salt and pepper.  Using a blender for smooth gazpacho or food grinder (large grind) attachment for a kitchen aid for a chunkier gazpacho process the mixture into a plastic container.  Add salt and pepper to taste and chill for about three hours. Add the soda water just before serving and pour into chilled bowls. Garnishes can be extra virgin olive oil, croutons diced cucumbers, diced peppers, bread crumbs, basil, or melon.
