Recipe: Ophelia's Bananas Foster Rum Butter Cake

It's a week of celebrating food and giving back to the community, Executive Chef, Bobby Stearns of Ophelia's is here to give us a sneak preview of their 2018 Restaurant Week menu!

Bananas Foster Rum Butter Cake

Recipe:

Part One - Butter Cake:

Bottom layer ingredients 6 tbsp. melt butter 1/2 c. sugar 1/2 c. brown sugar, packed 2 eggs 2/3 tbsp. salt 1 1/2 c. flour 2 tsp baking powder

Topping ingredients 8 oz. cream cheese 6 tbsp. brown sugar 2 eggs 1 tbsp. vanilla 3 1/2 c. powder sugar

Instructions preheat to 350 line 8in x 8in baking dish with parchment paper, combine all bottom layer ingredients and pour into dish, combine topping ingredients and then pour over bottom layer, bake for 45 - 50min or until the middle slightly jiggles, cool cut in to desired piece size and set aside, proceed to Bananas Foster topping.

Part Two - Bananas Foster:

Ingredients 1/3 c. butter 1 c. dark brown sugar 1/4 c. banana liqueur 1/4 c. Myers dark rum 4 bananas cut in half lengthwise, then cut in half again

Instructions combine butter sugar in skillet until sugar dissolves, add banana liqueur and bananas, cook 3-4min then add rum, cook until sauce is bubbly and coats bananas, place on top of butter cake and top with peanut butter ice cream, then top with extra pan sauce and serve IMMEDIATELY.
