Recipe: Pinstripe's Chicken Parmesan

The 9th annual Kansas City Restaurant Week is here! With 193 participating restaurants across the metro this is the largest KC Restaurant Week yet! Executive Chef, Brandon Johnson of Pinstripes cooks up some mouthwatering chicken parm!

Chicken Parmesan

Recipe:

  • 1 tbsp. vegetable oil
  • 1 chicken breast
  • 1 pinch salt & pepper
  • 2 slices mozzarella cheese (1/4” thick slices)
  • 1 tbsp. grated parmesan

1. Preheat oven to 500 degrees

2. In a medium sauce pan, heat the oil over medium heat

3. Season the chicken breast on both sides with salt and pepper

4. Set up your breading station with 2 shallow pans:

a. Egg whites

b. Breading (recipe below)

5. Place the seasoned chicken breast in the egg whites and coat both sides

6. Transfer chicken breast to breading and coat both sides evenly.

7. Once the oil is hot, place the breaded chicken breast in the pan.

8. Cook the chicken breast until it’s golden brown on both sides.

9. Once golden on both sides, flip the chicken and top with mozzarella and parmesan.

10. Place in the oven to finish cooking the chicken to an internal temperature of 165 degrees.

11. Serve with your favorite pasta and marinara sauce.

Chicken Parmesan Breading

  • 1/2 c. grated parmesan
  • 1/2 c. panko breadcrumbs
  • 1/2 tbsp. granulated garlic
  • 1 tsp. dried parsley
  • 1 tsp. dried oregano

1. Mix all ingredients together in a bowl

2. Place in a shallow pan for breading of chicken breasts
