RECIPE: Mom's German Apple Cake

Mom's German Apple Cake
Ingredients
2 cups sugar
3 eggs
1 ½ cups olive oil
¼ cup fresh orange juice
1 teaspoon finely grated fresh orange zest
3 cups all-purpose flour
1 teaspoon salt
1 tablespoon ground cinnamon
1 tablespoon pure vanilla extract
3 cups peeled, cored and finely chopped apple (soak in lemon water to prevent turning brown)
1 cup chopped pecans
Method
Preheat oven to 325. Grease a tube pan of a 9 x 13-inch pan. Mix dry ingredients first. Add wet ingredients and combine until mixed. Pour the batter into greased (or sprayed) pan and bake from 1 hour up to 1 ½ hours. Check cake with wood skewer or toothpick. Wood should be clean when removed.
