The cold weather is here, so what better way to welcome the low temperatures than with a hot bowl of chili!
Kate Durkin from Barrel 31 in Kansas City stopped by to show us her recipe for good chili to keep you warm.

RECIPE:
1 lb. lean chuck, ground 1 lb. lean pork, ground
1 lb. Steak 9 cubed
½ lb Bacon chopped
14 oz can Kidney Beans
14 oz can Pinto Beans
14 oz can Black Beans
14 oz can Navy Beans
6 garlic cloves, finely chopped
1 cup finely chopped onion
14 oz can of tomatoes
1 cup beef stock
¼ cup chili powder
2 Tablespoons cumin, ground
2 teaspoons paprika
2 teaspoons oregano leaves
1/2 teaspoon coriander, ground
1/2 teaspoon cayenne
STEPS
1. Sweat onions and garlic over medium heat until translucent
2. Add chopped bacon and begin to cook
3. When bacon is about half-way cooked, add ground beef, ground pork and steak trimmings
4. Continue to brown meat; about 8 minutes
5. Add beef stock, chili powder, cumin, paprika, oregano, coriander and cayenne
6. Let simmer for 3 -5 minutes
7. Add tomatoes and beans; allow to simmer for an additional 1 ½ to 2 hours
