Chew Diligence: The importance of attention to detail at The Monarch

This time on Chew Diligence, co-hosts Lindsay Shively and Jill Silva talked to two of the people behind one of the swankiest spots in town to grab a cocktail — The Monarch.

Parlour Manager Kenny Cohrs described it as a “great little neighborhood bar” where people can feel comfortable showing up in either a tuxedo or a pair of jeans and a button down.

With three distinct spaces, there’s plenty of room for everyone to get a taste of the action, whether that be shattering isomalt or smoking glasses.

The covered patio is perfect for summer evening hangs, while the main space inside provides a large, open room meant to feel like a living room and featuring acrylic butterflies on the ceiling.

The parlour is a more intimate setting — capable of holding only about 20 people — where customers can take their most esteemed guests.

Bar Director Brock Schulte shared the attention to detail present in each cocktail, even down to the crystal-clear ice.

As always, it’s #FirstTheFood: Jill visited The Russell, where she said she’s a fan of the roasted root salad and sticky toffee pudding. Lindsay gave Caffetería a try for takeout with the curry cauliflower bowl.
