The breakfast of champions? A great cup of coffee!
In this particular case, that is the absolute truth.
Angelo Segoni, a member of the barista team from Italy, is here at the Brewed Behavior headquarters in Kansas City, being trained by a master coffee coach, Tracy Allen.
He is already the Italian champion.
In two days, Tracy and Angelo will travel to Atlanta to compete in the US Coffee Championships. Then in June, it’s off to Dublin for the World Barista Championship.

It may be hard to believe, but there has never been a world champ in coffee from Italy.
When Allen is not training java giants, the CEO and founder of Brewed Behavior is working with coffee-producing countries to improve marketing and sales. He also does all he can to make sure the hard-working farmers at the beginning of the coffee chain are treated fairly.
Meanwhile, back in the coffee “gym,” Angelo is working his lattes instead of his lats and doing cappuccinos rather than crunches.
To win the big prize, Angelo will have to create new drinks as well as show mastery of the old favorites in an allotted amount of time. He will have to provide an appropriate amount of showmanship, while being surrounded by stopwatches and judges.
Angelo and Tracy combine science, feel and artistry to create something memorable in every cup.
