Broadmoor Bistro teaching Shawnee Mission students how to serve picture-perfect plates

OVERLAND PARK, Kan. — Broadmoor Bistro is playing host to some of the best chefs in the country, putting its students at the stove.

Tuesday, Chef Romain Monnoyeur, of Westport Cafe & Bar, displayed classical French techniques while producing a menu full of international flavors, impeccable plating and beautiful food. All thanks to the hands of Shawnee Mission School District Culinary students.

"We run our guest chef mentor series, which is part of the James Beard Foundation which started back in 2007," SMSD culinary arts instructor, Justin Hoffman, said. When it comes to the partnership, he added, "We are probably in the top one percent so there are maybe 10 or less in the country."

Monnoyeur didn't take it easy on the students. "We are doing the same kind of food that I'm doing at Westport Cafe, which means a bistro style food with a modern twist in it," he said.

The five-course menu caught some diners by surprise. Not all of them knew that students actually prepared the food.

Hoffman said, "They're in the kitchen. They're working. They're playing with their craft and to have a chef come in and share their experience with them and what they've been through, some of their story just solidifies everything we're trying to do here."
